Healthy Banana, Almond and Chocolate Ice Cream

Ingredients

  • 3 very ripe bananas, peeled, cut into chunks and frozen
  • ⅓ cup almond butter (can substitute peanut butter)
  • ¼ cup bittersweet or dark chocolate chips
  • chopped almond and chocolate for garnish (optional)

Directions

  1. Place the bananas and almond butter (or peanut butter) into the blender. Begin blending and quickly increase speed to high. Once everything is slightly combined, stop and add the chocolate chips.  Turn the machine back on and again increase the speed to high.  In about 10-30 seconds, the sound of the motor will change and mounds should appear in the mixture.  Stop machine immediately or melting can occur. If using a food processor: In a food processor combine the bananas and almond butter.  Process until almost smooth.  Add the chocolate chips and process until well combined.  
  2. Scoop into bowls, top with chopped chocolate and almonds, if using, and serve immediately. 

Serves two to three.

Note: You can also freeze the mixture to get a harder ice cream, but you may have to let it sit out and thaw for a minute or two before you’ll be able to scoop it.

Blueberry Ginger Ice Cream (raw, vegan, gluten free, soy free)

Serves 2

2 frozen bananas 

1 heaping cup frozen blueberries 

1/2 inch fresh ginger (or 1/2 tsp ginger powder if you’re using a food processor) 

1/4 cup cashews

By bedtime last night I still had about a big mug full of coffee in the pot. Somehow day old coffee didn’t sound appealing. So I added some Stevia and almond milk, poured it across several shot glasses and stuck them in the freezer! About an hour later, they were crystallized enough to have toothpicks inserted stably in the middle.

Enjoying the first one right now :) Try it instead of iced coffee or ice cream!

Ice Cream Sandwich Makeover!

INGREDIENTS:

- chocolate graham crackers

- light whipped cream

OR

- plain (or vanilla) Greek yogurt

- cinnamon

PROCEDURE:

Take two graham crackers. Put a tablespoon of either light whipped cream or Greek yogurt (plus a dash of cinnamon) in between both graham crackers. Freeze for 2+ hours. (They’re really good after 2 hours, but they’d be even better if left longer!) Then, enjoy! :)

These turned out to be SO good and satisfying! Who knew frozen cool whip actually tasted exactly like ice cream, haha.

P.S. The calories in 2 of these should equal around the calories in one normal one. But, with Greek yogurt, you get added protein! ;) You can even add in peanut butter for more!

15 CALORIE Frozen Whipped Cream Bites!

If you LOVE ice cream like I do, you will absolutely love these 15 calorie treats.
A cup of ice cream can have over 330 calories, while the whole can of whipped cream has about 290!

  1. Buy lightly sweetened whipped cream in a can (look at the ingredients to see if it’s truly just cream)
  2. Make little swirls on a baking sheet, and pop in the freezer for at least 2 hours.
  3. I piped these into cupcake papers which made them take up less space.
  4. Every time you get an ice cream craving pop one of these in your mouth!
